Poor Sunday Soup

This is a recipe that I brought back from Russia. One of my companions was Ukrainian and would make this soup for us on cold afternoons.I love this soup because it uses cheap ingredients and has good hearty flavor. I do it a little differently every time because I never wrote the recipe down, but here is the gist of things:

Ingredients:
1 Tbsp. vegetable oil
1 large carrot shredded on a cheese grater
1 small onion diced
2 medium potatoes cut into 1 inch pieces
1- 32 ounce box chicken broth or 4 cups of broth made from chicken bouillon

Optional- 1 cup egg noodles: I just started adding these recently because my kids love noodles. You might need to add another cup of broth if you add noodles though, just depending on how chunky you like your soup.

Directions: Heat oil over medium heat in a large sauce pan. Add onion and shredded carrot and cook until they start to soften. Add chicken broth and potatoes and bring to a boil. Cook until the potatoes are tender. Pour into bowls and enjoy!

If you add noodles, cook the taters until they are soft but still slightly firm in the center, and then put the noodles in and cook according to the noodle package directions. Pour into bowls and enjoy.
